Chicken Chinese Salad

Large ripe tomato, chunked
1 garlic clove
1 can sliced water chestnuts
4oz can sliced mushrooms
1 bunch of scallions, sliced
1 cup of celery, sliced
1/4 cup of soy sauce
2 cups finely shredded iceberg lettuce
1/4 cup cornstarch

Roll chicken in cornstarch. Heat oil on high heat. Add chicken. After chicken is cooked throw in all but lettuce and soy sauce. Stir, cover and simmer about 5 minutes. Add lettuce and soy sauce, serve over rice.
