post your winning recipes here please .. so I can steal them away and give them to my personal cook and home baker!!

I will post something if I can think of something interesting enuff .. will have to go consult with the expert cake bread and cookie maker of the house!! 'Smoke me a kipper .. I'll be back for breakfast!

 Post subject: Katherine's Famous Chinese Chicken Salad (for 2)

(my mom's)
Dressing:
2 tablespoons light oil
1 garlic clove pressed and chopped
1/4 teas. ground ginger
1 teas. Dijon mustard
1 tbls. honey
1 tbls. soy sauce
2 tbls. fresh lemon juice
dash of cayenne pepper

Salad:
1 cup lightly packed, cooked chicken pieces
4 cups shredded Romaine lettuce
3 scallions thinly sliced with part of green, too
2 tbls. cilantro leaves (coentro if you can can get it)
1 10oz can mandarin oranges drained
Chinese fried noodles (small type) La Choy
2 to 4 tbls. toasted slivered almonds (optional)

Combine dressing ingredients in a pint jar. Shake well. Add chicken to dressing. Cover tightly and refrigerate several hours or overnight (better). Put remaining ingredients, except noodles and almonds, in a large serving bowl. Refrigerate until serving time.

To serve: Add dressing and chicken (shake first) to serving bowl and toss all together. Divide nooldes between dinner plates and spread to edges. Spoon tossed salad in the center and spread almonds over.

To double it I would make 2 dressings and twice the chicken and put in 2 jars. Then double the lettuce, etc...

this is earthy's recipe .. but silly earthy he posted it on hte cookie thread ofcourse it is a cookie recipe ..

'Perigrin Took' peanut butter cookies:
1/2 cup butter
1/2 cup vegtable shortening (not vegamite, sky!)
1 cup granulated sugar
1 cup light brown sugar
1 cup smooth peanut butter
(could use crunchy or even grind your own)
2 eggs
1/2 teaspoon salt
1 teaspoon baking soda
3 cups flour (use a little less for soft cookies)

cream butter, shortening & sugars till well blended.
add peanut butter, blend
add eggs and mix till totally combined

add dry ingredients & combine thoroughly

form into small balls, roll in granulated sugar & place on greased cookie sheet. Sqwish down flat with your favorite utensil (I use a fork).

bake for 8 minutes - no more!! at 375 deg F (couldn't tell you what that is in C) cool on wire rack.

eat & enjoy with chocolate milk

share some w/farmer Maggot for all those 'shrooms you pilfered!!!

This one will fill the empty spaces after a long, self induced, period of starvation....

1 lb elbow macaroni (or any fav small pasta)
1/2 lb ground beef (season w/s & p)
1 small onion (or I use dried onion flakes)
1 28 oz can of peeled whole tomatoes (or more if you like tomatoes)
1 can full of water
1/4 lb shredded cheddar cheese
1 tablespoon olive oil
2 tablespoons butter
COOK:
brown ground beef - add cooked onion (or flakes)
cook pasta 'al dente' - drain well
add butter & olive oil to pasta & fry in pot for 3 min (high heat) stir constantly - season with s & p
add tomatoes (chopped) & ground beef - simmer 5 min
add cheese & simmer another 5 min

Serves 4-8

optional: add sauteed fresh mushrooms and/or 1/4 lb crispy bacon
try your own variations - have fun & enjoy!

Cripple but free; I was blind all the time I was learning to see<i></i>

1 bag reeses peanut butter chips
2 cans sweetened condensed milk (14 ounce size)
2 teaspoons vanilla extract
1 bag semisweet chocolate chips

Line an eight inch square pan with foil.
In microwave safe bowl nuke the peanut butter chips and contents of one can of the milk for a minute on high, stir, then nuke 30 more seconds. Stir in a teaspoonful of vanilla. spread resulting mixture in bottom of your pan.
Repeat the procedure with the chocolate chips, spreading your mixture over the peanut butter mixture.
Cover, chill in fridge until firm.

premade graham cracker crust for pie
(get the extra large size if you can find one)
2 x 8 ounce squares of cream cheese
(leave them out for awhile to get them to soften up)
1 x 14 ounce can of sweetened condensed milk
3 eggs
1/4 cup lemon juice from concentrate (the bottled kind)
1 x 8 ounce tub sour cream

Preheat oven to 300 degrees. In large bowl beat cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Add eggs and lemon juice and mix it up really well. Pour into your premade pie crust. Bake 50-55 minutes or until set, pull out and top with the sour cream, bake for 5 more minutes. Cool, then refrigerate thereafter.

Note:this recipe calls for a 10 3/4 ounce can of cream of mushroom soup. You can actually use any cream soup. We have used all kinds, and our favorites are cream of potato and cream of broccoli! Asparagus isn't bad, either.

I can (10 3/4 ounces) cream of mushroom soup
1 1/2 cups of water
1 cup uncooked regular white rice
paprika to taste
pepper to taste
4 skinless, boneless chicken breast halves

Preheat oven to 375 degrees.
In 2 quart shallow baking dish mix soup, water, rice, paprika, and pepper. Place chicken breasts on top of rice mixture. Sprinkle them with a bit more pepper and paprika. Cover the dish.
Bake at 375 degrees for 45 minutes or until done (we've never had a problem with it not being done in 45 minutes, BTW).

I got this from a co-worker, who makes it for all of the work parties. It's always a hit!

2 eggs
1/2 cup unsifted flour
1/2 cup sugar
1/2 cup firmly packed brown sugar
1 cup butter, melted then cooled to room temp
6 ounces (one cup) semi-sweet chocolate chip morsels
1 cup chopped walnuts (optional)
1 nine inch unbaked pie shell
whipped cream or ice cream (optional)

preheat oven to 325 degrees. in a large bowl beat eggs until foamy, beat in flour, sugar, and brown sugar until well blended. Blend in melted butter. Stir in chocolate morsels and walnuts. Pour into pie shell. Bake at 325 degrees for one hour. Remove from oven. Serve warm with whipped cream or ice cream. I used to jointly own a greek restaurant .. and this was a favourite of mine!

choose your fetta carefully .. a hard fetta is preferrable .. and not too salty! but a little salty is good.

Saute onion and garlic in a pan .. <2 onions and 3 cloves
of garlic to taste>
Add chopped large bunch of spinach .. cook tossing in the pan

Add cracked black pepper and a little salt if desired

Remove from heat

Crumble about 300 grams of fetta cheese into mixture

Add a couple of eggs to bind the mixture

Prepare or roll out pre-made fillo pastry - fold piece into long rectangle

Place one large spoon of mixture into one corner of the fillo and fold diagonally into a triangle and continue up the sheet of fillo

Coat the triangle shaped pies .. with egg yolk and a sprinkle of sesame or poppy seeds .. for decoration.

Place in mod-high oven and bake till browned! It wont take long to brown the fillo as the spinach mixture is already cooked!!

Take out and eat!!!! YUMMMM!!

The best spinach pie you'll ever eat!!
